Pistachio Pancakes with Cardamom

 

 

 

Pancakes are a universal comfort food. Most often sweet, sometimes savory, we all grew up with one favorite recipe or another. Even if you consider yourself to be a pancake aficionado, prepare to have your mind blow with these Pistachio Pancakes with Cardamom. If you’ve never tried the silky goodness of spelt flour, prepare yourself. This healthy alternative to white flour outshines all it’s competitors when it comes to taste. When you pair that with the exotic combination of cardamom, ginger, nutmeg and pistachios – you’ll have one eye-opening breakfast fit for a long-lingering brunch.

If you’ve never used pistachios in cooking, now’s your chance. These versatile and healthy nuts go way beyond ice cream. From side dishes to main dishes, from flour to oil, this nut does it all. And it’s not only delicious, but it’s a nutritional powerhouse as well. And if you’re concerned about calories, don’t be. High in fiber and protein, this nut might actually help you lose weight!

Ingredients:
  • ½ tsp baking powder
  • 1 tbsp butter or olive oil
  • ¼ tsp cardamom
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • ½ cup pistachio
  • 1 tbsp raw sugar
  • Pinch of salt
  • 1 cup spelt flour
  • ½ tsp vanilla extract
  • 1 cup water
Instruction:

Chop pistachios. Mix the remaining dry ingredients and wet ingredients in separate bowls. Combine and griddle ’em up! Pistachio Pancakes with Cardamom made with spelt flour and spices are much easier to digest and less sticky in the GI tract. Cardamom effectively destroys mucus in the stomach and breaks up the stickiness of wheat. These pancakes are good and good for you!
